I have been promising my friends and colleagues to share the marination recipe for BBQ chicken. It is a very simple recipe that everyone can do it for home BBQ.

About buying spices:
Spicy is the crucial ingredient to give decent flavor to the food. You can easily buy various of spices or ready to cook sauces in the supermarket nowadays. Above is a Northern Indian spice for marinating chicken. I usually go to Mustafa to buy spices.

Meat to prepare:
1) 5kg fresh chicken thighs or breasts - Skin is removed as I was trying for something healthier.
2) 1kg boneless chicken cube

Ingredients:
1. 300g yogurt
2. 100g masala
3. 2 spoons of ginger juice
4. 3 spoons of garlic paste
5. 3 table spoons of oil
6. 1 lemon (juiced)

As masala is already salty, thus need not add salt for the marination.

Combine above 6 ingredients in a large bowl. Add the chicken breasts. Refrigerate few hours or overnight.



BBQ Prepare Work :
Soak the bamboo sticks in the water for 1- 2 hours in order to prevent it gets burn on the BBQ pit.

Apart from chicken meat, you can prepare more meat for BBQ, for example, ham, meat ball and sausages.



If food appearance is your primary concern, I would suggest you to dress the BBQ meat with some vegetables and fruits. It certainty tastes good and goes well with grill chicken.

BBQ Vegetables and Fruits:
1. Pineapple
2. Red, Green and Yellow Capsicum
3. Onion
4. Cucumber
5. Leek
6. Broccoli
7. Cauliflower
8. Short Beans

Soya Sauce preparation for vegetables:
1. 1/2 cup of soya sauce
2. 5 spoons of brown sugar
3. 1 glove of garlic (mashed)
4. 2 spoons of rice wine

Add above 4 ingredients in the small pot and heat until mixing evenly.



When you start to grill, you can brush some soya sauce on the vegetables.

Brush the rack with butter or oil to prevent the chicken from sticking. Grill the mean for about 5 minutes, until nicely browned or caramelized.



After the chicken cooked through, squeeze some lemon juice on the chicken and serve as room temperature. Absolutely delightful!

不知道從甚麼時候,我開始帶便當。
帶著帶著,除了節省了很多在外頭覓食的費用。
不知不覺,學會了一項謀生技巧 -- 烹飪。
食物的顏色漂亮,有助於消化。
菜色簡單的便當,
就是我帶到公司吃的午餐。
I don't know since when I started to bring lunch box.
It helps me to save money eating outside.
Gradually, I learn one more skill, cooking.
The decent color of food may help to digest.
This is a simple food that I bring to office.

小時候,不常吃牛肉。媽媽的鍋子從來沒有烹調過牛肉。我的家人都排斥牛肉的腥騷味。
在我的家人中,我對食物的接受範圍尺度,算是最大的。
我喜歡吃牛肉,也愛吃羊肉。這兩种紅肉,如果烹調恰到好處,牛肉嚼勁十足,吃起來很滋味。
I rarely eat beef in my childhood. In my family, there is no one who likes the smell of beef. Therefore, beef never appears in my mother's wok. Among my family members, I am the only one that can accept all kind of food. I love to eat red meats like beef and mutton. When starts to chew the tender juicy beef wait until the meat melts into the mouth, how wonderful it is? Meat of heaven!
